The surprise of the lineup: a Pedro Ximénez that's bone dry. When people hear "PX" they expect syrup. This is the opposite — around 20 years of oxidative ageing turn it into something powerful, saline and dry, with a freshness that catches you off guard.
Old gold in the glass with bright amber edges. Intense on the nose: roasted coffee, fine wood, toasted almonds. The palate is strong but fresh, beautifully balanced acidity, with saline notes and a long, long finish. As good before a meal as it is to linger over afterwards.
One for the curious. Serve with cured ham, hard cheese, almonds, or anything umami-rich.
