Two grapes, two mountains, six years of patience. Pajarete blends Moscatel from the Axarquía with Pedro Ximénez from the Montes de Málaga — both grown on steep slate soils where farming is done by hand because machines simply can't get there.
Then it waits. Around six years ageing oxidatively in century-old American oak casks, in the traditional criaderas y soleras system. The result is mahogany in the glass, powerful and complex on the nose — fine wood, spice, ripe fruit — and wide, long and toasted on the palate, with that signature note of roasted nuts.
A wine for slowing down. Try it with aged cheese, dark chocolate, or a long conversation after dinner.
