Caníbal Tinto · Bodega Malvajío
The flagship — a single-plot wine from the vineyard beside the winery itself. Caníbal is Malvajío's crown jewel: a vino de parcela from the plot on the road between Mijas and Benalmádena, made in tiny quantities and aged long in French oak. This is the wine the whole project is measured by.
A blend of Syrah and Cabernet Sauvignon (roughly 65/35), from vines at around 400m altitude on the south face of the Sierra de Mijas, looking out to the sea. Deep ruby with violet reflections; a powerful nose of ripe black fruit, spice and fine toast. Complex and structured on the palate, with soft tannins and a long, persistent finish. Serious, age-worthy, and proudly Mediterranean.
Serve at 16–18°C, decanted. The bottle for the special occasion — grilled and braised red meat, game, aged cheese, long dinners.
